What is Gum Arabic?Gum Arabic is a type of natural gum that is made from the hardened sap of different species of acacia tree. Gum Arabic is mainly collected from the two related species, specifically Vachellia or Acacia seyal and Acacia senegal. The FDA established a definition for dietary fiber in its 2016 Nutrition Facts label final rule. The acacia tree (A. senegal; synonym Acacia verek Guill et Perr.) is a thorny, scraggly tree that grows approximately 4.5 m in height. It is most abundant in regions of Africa, especially in the Republic of Sudan. A distinguishing feature of the species is the presence of triple spines at the branchlet base. During times of drought, the bark of the tree splits, exuding a sap that dries in small droplets or tears. Commercially, Acacia Senegal and Acacia Seyal are the two most important sources of acacia gum for Europe. The tree sources of acacia gum grow in the gum belt of Africa, which stretches from Senegal in the west to Somalia in the east. Acacia gum from Acacia Senegal is a pale to orange-brown coloured solid, which breaks with a glassy fracture, for this reason, it is also known as hard gum, whereas Acacia Seyal is known as flaky gum.


The gum consists of a mixture of arabinogalactan oligosaccharides, polysaccharides and glycoproteins. Acacia gum is very soluble in water (it dissolves easily) and stabilizes combinations of water, oil and other ingredients (emulsions).
